Summer in a glass. Spiced mango, cool coconut yoghurt, and a rubble of Simply Sweetened Kurma for the crunch that makes people ask what's in it.

- Ripe mango, diced 2
- Coconut yoghurt 400g
- Ground cardamom ¼ tsp
- Honey or maple syrup 2 tbsp
- Lime, zested 1
- Simply Sweetened Kurma ½ tub
- Mint leaves, to finish a few

A cold glass of the same mango, blended, if you're making an afternoon of it.
Method · 10 minutes
- Toss the diced mango with the lime zest and a spoonful of the honey. Let it sit while you build the rest, the juices are the point.
- Loosen the coconut yoghurt with the cardamom and the remaining honey until it ripples off the spoon.
- In four glasses, layer yoghurt, then mango, then a scatter of crushed Simply Sweetened Kurma. Repeat once.
- Finish with a whole Kurma stick balanced on top and a single mint leaf. Serve straight away so the crumble still snaps.
