Mango lassi parfait with sweet Kurma crumble.

Summer in a glass. Spiced mango, cool coconut yoghurt, and a rubble of Simply Sweetened Kurma for the crunch that makes people ask what's in it.

Ingredients · serves 4
  • Ripe mango, diced 2
  • Coconut yoghurt 400g
  • Ground cardamom ¼ tsp
  • Honey or maple syrup 2 tbsp
  • Lime, zested 1
  • Simply Sweetened Kurma ½ tub
  • Mint leaves, to finish a few

A cold glass of the same mango, blended, if you're making an afternoon of it.

Method · 10 minutes
  1. Toss the diced mango with the lime zest and a spoonful of the honey. Let it sit while you build the rest, the juices are the point.
  2. Loosen the coconut yoghurt with the cardamom and the remaining honey until it ripples off the spoon.
  3. In four glasses, layer yoghurt, then mango, then a scatter of crushed Simply Sweetened Kurma. Repeat once.
  4. Finish with a whole Kurma stick balanced on top and a single mint leaf. Serve straight away so the crumble still snaps.
